Dinner Party, February 11, 2012


Dinner for ten, Larchmont, NY.

Cheese board
Warm endive and poached carrot salad
Flounder en papillote with pommes de terre boulangere
Pate feuilletee with chocolate pastry cream, whipped mascarpone, and dehydrated apple chips


Brown-sugar braised endive.



Warm endive and poached carrot salad; micro mustard greens; brown butter vinaigrette.















Pomme de terre boulangere.



Flounder en papillote.



Papillote; lemon slice; fresh dill and thyme; julienne of leeks and carrots; sauteed wild mushrooms.












Pate feuilletee; chocolate pastry cream; whipped mascarpone; dehydrated apple chip garnish.







Carrot prep.




Composed cheese board: trio of cheeses; quince paste; toasted nuts; oil-cured olives.




Papillote prep.
